Hautes Côtes de Beaune Red 2023 - Philippe Germain 75cl
Hautes-Côtes de Beaune red is a Burgundy wine from the commune of Nantoux, sourced from several localities such as "En Marlot", "Au Rousseau" and "le Closeau". With a total area of 4 hectares, the vines are exposed to the west and southwest, on clay-limestone soils.
The grape variety used is Pinot Noir, planted between 1940 and 2009, with short pruning using the Guyot and Cordon de Royat methods. Harvesting is done by hand, followed by a 12-day maceration in concrete vats, with light punching down and daily pumping over. Aging takes place in oak barrels for 10 months.
This wine is characterized by its finesse and aromas of undergrowth, fresh red berries such as strawberry and raspberry, and floral notes. Versatile, it can be enjoyed young or after a few years of aging. It pairs ideally with white meats such as poultry or veal, and can also be enjoyed as an aperitif. The recommended serving temperature is 17 to 18°C.
