White Spargolato 2021 - Domaine Mondange 75cl
This white wine, Spargolato, from the Vin de Corse AOP, is distinguished by its finesse and elegance. It is made from a blend of Vermentinu and Genovese grape varieties, from vines around 20 years old. The vines are trained using the Royat cordon system, with a yield of 35 hL/ha, and special attention to thinning to promote grape quality.
Harvesting is carried out manually at dawn, and the grapes are placed in a cold room for 24 hours before the direct pressing of the entire harvest. After settling at 10°C, alcoholic fermentation takes place between 16 and 18°C in wooden vats, which gives a beautiful complexity to the wine. Aging on fine lees lasts 18 months, with part in wooden barrels and the other in stoneware jars, contributing to a rich texture and the development of aromas.
On the nose, Spargolato reveals captivating floral aromas, blending notes of white flowers and acacia with scents of juicy pear and an elegant buttery touch. On the palate, the attack is fresh and lively, with a beautiful breadth. The floral and fruity flavors are confirmed, supported by a pleasant richness, and the finish reveals a beautiful length, promising a lasting pleasure.
This wine is best served between 10 and 12°C, making it ideal for any occasion, whether as an aperitif or with light seafood or poultry dishes. This wine is a pleasure to drink upon release, but can also be aged for a few years to develop and enhance its aromas.
