Red Spargolato 2021 - Domaine Mondange 75cl

Domaine Mondange's 2021 Spargolato Rouge is an AOP Vin de Corse red wine distinguished by its nose of very ripe red fruits, enriched with spicy, peppery notes, as well as a slight smoky and toasty touch. On the palate, it offers a supple attack, harmonious fullness, silky tannins and a beautiful length, while revealing the characteristic aromas of the Sciaccarellu grape variety.

This wine is made from a blend of Sciaccarellu, Grenache, Niellucciu and Syrah, from vines with an average age of 25 years, carefully cultivated using the Royat cordon system and with a yield of 35 hL/ha. The harvest is manual and takes place only in the morning, after a 24-hour period in a cold room.

Vinification includes alcoholic fermentation in foudres, at controlled temperatures between 26 and 28°C, as well as extended maceration. Aging lasts 18 months in wooden vats, which contributes to its complexity.

Recommended to be served between 16 and 18°C, this wine pairs well with a variety of dishes and can also be kept for a few years to appreciate its evolution.
