The Star Chardonnay "En Novalet" 2023 - Domaine Rolet 75cl

Domaine Rolet's L'Étoile Chardonnay 2022 - 75cl is a 100% Chardonnay from an exceptional terroir in the L'Étoile appellation, named after its five surrounding hills and the "Pentacrine" star fossils found in its soils. The "En Novalet" plot, located in the village of Plainoiseau, lies on gray Lias marl, covered with silty scree, and benefits from an ideal southern exposure.

Harvesting and sorting are carried out manually. Vinification and aging for 12 months in oak barrels give the wine a beautiful structure and refined elegance. This Chardonnay can be served between 12 and 14°C. It can be enjoyed today for its freshness and chiseled character or can be kept for 8 to 10 years, revealing more suppleness and roundness. Perfect with seafood, fish, or cold starters.
