Champagne Besserat de Bellefon Extra Brut 75cl
Besserat de Bellefon Extra Brut is a champagne crafted by Cellar Master Cédric Thiébault, who sources from the finest Champagne villages, such as Mesnil-sur-Oger, Mareuil, Bisseuil, Mailly, and Rilly-la-Montagne. This cuvée is based on a unique production process, passed down since 1930. By using a reduced quantity of tirage liqueur, the House gives its champagne a light and airy mousse that is smooth, creamy, and persistent, without malolactic fermentation.
The Extra Brut's color is pure and bright, displaying a straw yellow with copper highlights. On the nose, mineral and slightly citrus aromas mingle with saline and toasted notes. On the palate, the attack is fresh and finely chiseled, and the wine, with its very low dosage, allows for simple and refined pairings with seafood, seared scallops with lime, or Asian citrus dishes.
To accompany this exceptional champagne, it pairs perfectly with a cod tartare with citrus and red berries, as well as a terrine of Brittany crab with curry chantilly, offering a harmonious and revealing taste experience.
