Hautes Côtes de Beaune White 2022 - Philippe Germain 75cl
The white Hautes-Côtes de Beaune is a Burgundy wine produced in the commune of Nantoux, from places such as "En Bignon" and "Sous le Bois Guillemain". With a total surface area of 34 ares, the vines are exposed due west, on clay-limestone soils.
The grape variety used is Chardonnay, planted between 1970 and 2000, and the pruning is short using the Guyot method. Harvesting is done by hand, without destemming, followed by crushing before pneumatic pressing. After settling overnight in stainless steel vats, the wine is transferred to barrels by gravity. Aging takes place in oak barrels for 12 months, 20% of which are new.
The terroirs of the Hautes-Côtes produce wines that are both fruity and mineral, with a beautiful fullness. Situated at a higher altitude than the Côte de Beaune, these wines are distinguished by their very mineral expression, offering easy access in their youth, ideal as an aperitif or as an accompaniment. Over time, the wine becomes richer and fuller, revealing buttery notes.
It is recommended to keep it for between 2 and 5 years to pair it with poultry in cream sauce, foie gras or a fricassee of chanterelles. The ideal serving temperature is between 15 and 16°C.
