La Caumette 2021 - Lafage 75cl

La Caumette is a red wine from the Côtes Catalanes (Roussillon) produced from Mourvèdre, Grenache, and Carignan grape varieties. This wine seduces with its very dark, almost black color and its expressive bouquet of black fruits (cherries, blackberries, blackcurrants), enriched with smoky notes, licorice, spiced rum, and a touch of vanilla. On the palate, it combines power, complexity, and suppleness, offering a remarkable finish.

The vines are planted in the Agly Valley, on soils of schist and black clay marl. The grapes are carefully hand-selected and then sorted a second time in the cellar. Fermentation takes place in temperature-controlled stainless steel vats. Seventy percent of the wine is then aged for six to nine months in barrels, while 30 percent remains in stainless steel vats.

This wine pairs perfectly with herb-crusted rack of lamb, roast duck, or charcuterie and cheese platters. It is recommended to decant this wine at least one hour before serving.
