Philippe Germain's Savigny-les-Beaune 1er Cru "Les Hauts Marconnets" 2022 is a wine that reflects the elegance and finesse of Burgundy's great Pinot Noirs. Sourced from the commune of Savigny-lès-Beaune, this wine is produced on clay-limestone soils, particularly from the "Les Lavières" area, where the 40-year-old vines thrive in a favorable climate.
Vinification begins with a manual harvest followed by systematic crushing and destemming. A cold maceration of 4 to 5 days precedes alcoholic fermentation maintained at 30°C for 15 days. The wine is then transferred by gravity into French oak barrels for 15 months of aging, 20% of which is in new barrels, which brings a subtle complexity to the whole.
On the nose, this Savigny-les-Beaune reveals itself delicately, expressing aromas of small red fruits and violet. On the palate, it presents a beautiful initial lightness, before gaining in density and volume, thus offering a refreshing and feminine finish, with fine tannins that stretch pleasantly in length.
Ideally, this wine should be enjoyed after 3 years of aging, but it can very well be kept and evolved for 8 to 10 years. It will pair perfectly with delicate red meats or small game birds, best served at a temperature of 17-18°C to fully appreciate its potential.
